Manual harvest in mid-September, direct destemming into <strong>750-litre terracotta amphorae<\/strong>.<\/p><p>Fermentation on the skins for approximately <strong>10 to 14 days<\/strong>, spontaneous, <strong>without added yeasts<\/strong>.<\/p><p>Everything done by hand, including the racking, most of which is carried out by gravity.<\/p><p>Once fermentation is complete, the wine rests for one month in steel. Then it returns to amphora and concrete until bottling. The amphora allows a slow micro-oxygenation. The concrete allows slow evolution in a context of great thermal inertia. The wine evolves at its own pace.<\/p><p><span style=\"color: #960018;\">Dry, fruity red. <strong>Deep ruby colour, tannic, with good structure.<\/strong><\/span><\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-9ed1f7f elementor-icon-list--layout-traditional
