Sparkling Wine Méthode Champenoise Brut 2020

Our sparkling wine. 2020 vintage. Limited production: 700 bottles.

Manzoni Bianco, from the vineyards of Val Liona. Manual harvest in mid-September. Direct pressing, spontaneous fermentation in steel tanks separating the must from the pomace.

Tirage in March 2021, after malolactic fermentation. Secondary fermentation in bottle with the addition of sugar and yeasts. Ageing on the lees for over two years. Disgorgement in December 2023.

Amber colour. Delicate aromatics of Manzoni Bianco with a pronounced mineral note. Drunk as an aperitif or with light dishes.

Winemaking Sparkling Wine Méthode Champenoise Brut

Harvest:

Carried out by hand in mid-September in plastic crates of approximately 15 kg.

Winemaking:

After the manual harvest, the grapes were destemmed and pressed in steel tanks, separating the must from the pomace. Spontaneous fermentation.

Méthode Champenoise:

Tirage in March 2021, following malolactic fermentation, with the use of sugar and yeasts. Disgorgement in December 2023.

Ageing:

In steel tanks until the formation of bubbles. Then secondary fermentation in bottle with ageing on the lees for over two and a half years.

SPARKLING WINE

Organoleptic Characteristics

Amber in colour, it displays the delicate aromatics of the Manzoni Bianco grape with a pronounced mineral note.

The amber colour is unusual for a sparkling wine, but consistent with our philosophy: spontaneous fermentation, minimal intervention, respect for natural timings.

The perlage is fine and persistent, the result of two and a half years of ageing on the lees. The mineral note typical of our wines is present here too, balanced by the delicate aromatics of Manzoni Bianco.

Tasting Notes

Appearance: Amber yellow, fine and persistent perlage

Nose: Delicate aromatics, mineral note, yeasts, bread crust

Palate: Fresh, sapid, elegant

A different sparkling wine. It does not seek immediacy, it does not seek effect. It seeks the balance between freshness and complexity.

The long ageing on the lees imparts structure and depth. Spontaneous fermentation maintains territorial typicity. The result is a sparkling wine that stands apart.

The production of sparkling wine requires time, space, attention. Each bottle must rest on the lees for years. Patience is needed.

We do not produce sparkling wine every year. Only when the vintage allows it, when the Manzoni Bianco grape reaches the right characteristics.
